Grape Characteristics

A base of Pinot Noir with a small addition of Chardonnay of the finest vineyards of “Val Tidone” picked at the optimum moment to preserve its freshness. These vineyards lie at an altitude of 350-400 meters above sea level on clayey, silty soil made up of calcareous marl.

Winemaking

Soft pressing of the whole grapes followed by vinification “in white” with fermentation at controlled temperature. According to the dictates of the classic method, the tirage for the second fermentation in the bottle is carried out during the springtime following harvest. Aging on the yeasts for at least 40 months to enrich the bouquet and flavour.

Organoleptic characteristics

Exuberant white foam; very fine and persistent bubble; intense and bright straw yellow colour; its perfume is penetrating, complex with nice evolved notes; the wine is dry and savoury, sharp and powerful on the palate. Serve at 8 °C, perfect as all-course wine, preferring dishes based on raw fish and shellfish.
