“Res Alta” wines are presented to the public after a preparation phase that took several years. The choice of the land, the clonal selection, the planting techniques of the vineyards, the cultivation aimed at low production yields and the manual harvesting of the grapes at the optimum moment of harmony between sugars and acidity are the qualifying points of the project. The vinification and the new techniques of maceration and fermentation have allowed to obtain products of great structure and finesse. A correct aging in large barrels and barriques completes the personality of these wines without losing the typical characteristics deriving from the fruit. The soils, exposed to the south-east, are mainly calcareous matrix, composed of clays of various kinds that form gentle reliefs between 200 and 300 m height s.l.m. The light color of calcareous marl is a source of precious brightness for the vine and induces a microclimate that allows the containment of nighttime temperatures, a fundamental factor for the fragrance of grape extracts. On the other hand, the lower hills, located to the north of the vineyard area, stand on terraces with a pebbly bottom, which favor the thermal rise and the phenolic evolution of the grapes. On these lands designed by erosion phenomena that occurred in the past millennia, viticulture is interested in the best positions to obtain greater body and softness of the wines.
