Pure Sauvignon grapes, selected in low yield vineyards per vine on the hills of Val Tidone (200-250 m.s.m.)
Winemaking
“White” vinification with soft pressing; fermentation of the must in stainless steel vats at low temperature (18 ° c) to keep the varietal aromas intact; adequate rest on its lees; sterile and cold bottling.
Organoleptic characteristics
Glossy straw yellow color; typical grape scent of origin, with hints of linden blossom, sage, tomato leaves, exotic fruit and with mineral flavors; dry taste, full, soft but fresh and clean, pleasantly fruity.
Served at 10-12 ° c, it goes well with seafood, fish and crustaceans, but it is also good with white meats and fresh cheeses.
