Grape Characteristics

This D.O.C wine is made from 100% Bonarda grapes from the Piacenza hills (200-250 m.s.m.), from vineyards with a yield limited to 100 q.li / ha.

Winemaking

Vinification “in red”, with a short period of maceration of the skins in the must; first fermentation in stainless steel vats at a controlled temperature. Light frothing in autoclave to bring the level of overpressure to about 1 bar (lower than sparkling wines), this second phase of processing is repeated several times during the year, for each individual batch, so as to ensure constant freshness and fragrance.

Organoleptic characteristics

Slight red foam; intense purple color; strong scent of blackberry and ripe grapes, with a memory of violet; full taste, soft, lively, with a pleasant fruity background that fades into bitter almond.
