Grape Characteristics

A base of Chardonnay, with the addition of 20% of Pinot Noir, of the most suitable vineyards of the Val Tidone hills, cultured at the optimal time: limited sugar content; adequate acid content; maximum wealth of varietal aromas. It is produced only in the best years.

Winemaking

Soft pressing; “white” vinification; fermentation at controlled temperature; bottled mousse with the classic method; over three years of aging on the lees, to enrich the bouquet and flavor.

Organoleptic characteristics

Exuberant white foam; very fine, continuous and persistent perlage; bright golden yellow color; intense, penetrating and complex aroma (hints of bread crust, toasted almonds, golden apple, berries and mineral flavors); dry taste without harshness, very elegant, fresh and pure, with long and pleasant aromatic persistence. Serve at 8 ° as an aperitif and with fish dishes.
