Grape Characteristics

This D.O.C wine is made from 100% Pinot Noir grown on the Piacenza hills.

Winemaking

Vinification in part with carbonic maceration: bunches harvested by hand, intact, placed in small steel vats saturated with carbon dioxide generated by the must; in this phase (intracellular fermentation) particular perfumes develop, and the taste becomes softer (transformation of malic acid); followed by crushing and controlled fermentation. The rest of the grapes is traditionally vinified “in red”. The two masses are then assembled.

Organoleptic characteristics

Slight red foam; ruby color with purple color; fragrant perfume, intensely fruity, (blackcurrant, morello cherry, strawberries, banana) and floral; very soft, fresh and pure taste, with a persuasive grape background and small macerated fruits.
Served at 14 ° c, it is drunk throughout the meal, without excluding tasty fish dishes. It is also excellent with chestnuts.
