Grape Characteristics
Original assembly of Pinot Noir, Merlot and Bonarda (Croatina) of the hills of Piacenza, created for the fortieth harvest of the Valtidone Winery.
Winemaking
Vinification “in red” with cold maceration of the skins in the must to keep the varietal aromas of the grapes intact; controlled fermentation in stainless steel vats; short aging (no wood); cold sterile bottling.
Organoleptic characteristics
Ruby color with purple reflections; intense, fragrant aroma of ripe grapes and wild berries (blackberry, raspberry, blackcurrant, strawberries); soft, gentle, frank and fruity taste, with a mellow jam base. Served at 14-15 ° c. it goes well with any meal, even with tasty and spicy fish dishes (soups, brodetti, grilled or stewed blue fish).
