100% Malvasia di Candia grapes, grown in the most suitable vineyards on the hills of Val Tidone (200-250 m.s.m.)

Winemaking

“White” vinification with soft pressing; the must is fermented partly in steel at a controlled temperature, so as to leave a substantial natural sugar residue; the second fermentation takes place in an autoclave; it follows the passage in the bottle without loss of pressure.

Organoleptic characteristics

Exuberant white foam; thin, continuous and persistent perlage; intense, aromatic scent with hints of sage flowers, musk, ripe fruit; sweet, fresh and light, with a pleasant fruity and floral background that lingers in the mouth for a long time.
Serve cool, at 8 ° C, is suitable for bakery pastry and non-acid fruit, in particular peaches, strawberries, raspberries.
